Place two rimmed baking sheets in the oven and preheat to 450°F.
2 pounds sweet potatoes (about 3 large)
Wash and peel sweet potatoes and cut off the ends. Cut potatoes in half length wise, and if very long, cut in half crosswise. Cut each into wedges, either thin or thick as you desire. The important thing is to make sure that they are all the same size and thickness so that they cook evenly.
¼ cup olive or other vegetable oil
Put the sweet potatoes into a large bowl add oil. Using your hands, toss the potatoes until well coated.

1 tablespoon salt
Sprinkle with sugar and salt. Using your hands, mix well to coat.
Remove baking sheets from oven and place wedges evenly on sheets in a single layer.
Bake at 450°F. After 15 minutes, remove baking sheets from the oven and turn fries over using a pair of tongs and a spatula. Return to oven.
Bake until fries are golden and tips are starting to brown, about 10 to 15 additional minutes (25 to 30 minutes total).
Let cool for 5 minutes before serving.
