Pecan Balls

Warning: These are highly addictive cookies. Once you have one, you'll want three more. So make sure you have enough to share. This recipe has been passed down on my mother's family and was often Santa's favorite cookie when I was growing up.

Pecan Balls

Preheat the oven to 375°F.
2 cups butter (softened)
3 tablespoons sugar
In a large mixing bowl, cream butter and sugar together.
4 cups of all-purpose flour
½ teaspoon salt
Add flour and salt. Mix well.
4 teaspoons vanilla extract
Add vanilla extract and mix well.
4 cups chopped pecans
In a food processor, grind pecans so that they are very fine.
Remove from food processor and add to dough. Mix well with a spoon or spatula.
Using your hands, remove a small piece of dough and roll into a small ball. Place 12 (or so) balls onto a cookie sheet and bake for 12 to 15 minutes. The cookies will crack slightly.
Repeat until dough is gone.
Remove from oven and place on a piece of wax paper to cool. Caution: The cookies will be very fragile when they come out of the oven. Handle them with care and allow them to cool for at least 30 minutes.
1 to 2 cups powdered sugar
When completely cooled, roll cookies in a bowl of powdered sugar until covered.
