We had leftover phyllo dough from our spanakopita, so my amazing wife created this delicious recipe for apple turnovers. My daughter was so excited to help make up a recipe that she decided to name these turnovers 'Apple Yum Yums.'

Serves 4 to 6
Preheat oven to 350°F.
2 medium apples, peeled and diced
1 tablespoon cornstarch
1 tablespoon sweetened condensed milk
1 tablespoon brown sugar
1 tablespoon butter, melted
2 teaspoons lemon zest
2 teaspoons orange zest
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
1 teaspoon ground ginger
½ teaspoon vanilla extract
In a large bowl, combine apple, cornstarch, condensed milk, brown sugar, melted butter, zests, spices, and vanilla extract. Stir until apples are well coated.
10 sheets of phyllo dough, approximately 10x14 in size
2 tablespoons melted butter
On an ungreaased baking sheet, place one sheet of phyllo dough and lightly brush top with butter. Place another sheet of phyllo dough on top and repeat until you have ten layers.
Pour apple mixture into a small pile on the middle of the buttered dough. Fold dough over, tuck in sides, and roll (just like you're making a burrito).
Bake at 350°F until it becomes light golden brown, about 20 minutes.
Remove from oven and let cool for 5 minutes on a wire rack.
1 tablespoon brown sugar
Sprinkle brown sugar on top of turnover, slice, and serve.
